A restaurant is the hardest small building an MEP engineer will touch: hoods that must actually capture, a kitchen that has to stay negative to the dining room, gas and grease routed correctly the first time, and a lease clock running the whole time. Red Brick Engineering designs the mechanical, electrical, and plumbing for restaurants and commercial kitchens under a single principal PE stamp, built to clear health-department and building review and to keep the space on schedule.
The core of any commercial kitchen is airflow, and it either works or it doesn't. We size Type I grease hoods and Type II heat-and-condensate hoods to the appliance line beneath them, then engineer the exhaust and make-up air together so the numbers actually close. Make-up air is tempered so the kitchen stays comfortable and the hoods keep their capture, and the whole space is balanced to hold the kitchen slightly negative to the dining room so grease-laden air and odors don't migrate to the guests. Getting exhaust and make-up air to close is the calculation a health inspector and a chef both notice immediately.
On the plumbing side we design the grease-waste system and size the interceptor to the fixtures and flow it actually has to handle, routed to satisfy the local health department and plumbing code. Gas piping is sized to the full connected load of the cooking line, water heaters, and any make-up air heat, with pressure and pipe runs worked out so every appliance gets what it needs at peak. We coordinate the refrigeration and walk-in loads early — condensate, drainage, power, and heat rejection — so the cooler and freezer don't become a field problem after the slab is poured.
Most restaurants live inside a lease, and rent starts before the doors open. We produce permit-ready, coordinated sets built to clear first submittal, with the schedule driven by scope and how complete the kitchen equipment and architectural information is at kickoff. Because one principal PE stamps the mechanical, electrical, and plumbing, there is no lag while three separate consultants hand drawings back and forth — a real advantage on a fast tenant improvement where the kitchen equipment schedule is still settling. We design around the real constraints of an existing shell or older space instead of assuming the as-builts are correct.
Restaurant plan review runs through both the building department and the health department, and a set that satisfies one but not the other still bounces. We design to the adopted mechanical, plumbing, fuel-gas, and energy codes for the jurisdiction, coordinate the grease and ventilation requirements the health authority will check, and handle COMcheck energy compliance as part of the deliverable — California Title 24 when the work is in-state. Getting the airflow, grease, and gas right on the first submittal is what keeps a buildout from losing weeks to a second correction cycle.
